Ultimate Pot Roast Sandwich/Soundgrowler Acid Cult/Purple Hill Witch “Celestial Cemetry”

Oh the irony.  We made this pot roast sandwich a couple of weeks ago, little did we know this was going to be the last non-plant based meal we were going to make and it just so happened to be the largest chunk of meat we’ve done in a long time.  A large chuck roast covered in our Not So Gentle Butchers Rub that gets grilled then braised in beef broth and red wine until tender.  The shredded pot roast goes on toasted brioche buns and topped with a tomato gravy, melted white cheddar and a creamy onion horseradish sauce.  We paired up this huge sandwich with Soundgrowler’s Acid Cult hazy IPA and Norway’s doom metal titans Purple Hill With and their killer “Celestial Cemetry” album.

Ultimate Pot Roast Sandwich – This pot roast is going to take the better half of a day, so we’ll start there.  First we take a four pound chuck roast and cover all sides with olive oil and our Not So Gentle Butcher’s Rub.

The beef roast goes over some hot coals to char on both sides.

We remove the steak from the grill and place it in a pan over a bed of onion, celery and carrots.  We pour 1 cup each of red wine and beef broth over the steak.

Cover the pot roast and place in a 325 degree oven for about 5-6 hours.   As that’s happening we can move to the charred onion horseradish sauce.  We’re going to cook red onions directly in the embers of the fire until the inside is soft and creamy.  Place the whole onions in their skin directly in the pile of charcoal, nestling them in so that all sides are exposed to direct heat.

After about 40 minutes the skins will be completely black and ashed over but the insides will be soft and caramelized.

To the soft onion we’re going to add a couple of tablespoons of prepared horseradish then stir to combine.

Time to check on the pot roast, when the meat shreds easily with a fork it’s done.

Next we take the pan juices from the pot roast and stir in 1 heaping tablespoon of tomato paste then we whisk until a thick gravy is formed. Spoon the gravy directly over the shredded pot roast.

It is now time to build the ultimate sandwich.  We stack the sauced pot roast on toasted brioche buns.

We drape a slice of sharp white cheddar over the hot pot roast until it melts.

For a fresh, crisp, spicy touch we add sliced fresh banana peppers then the onion horseradish sauce.

Close up the sandwich and start to devour this all American classic delivered in a completely different yet delicious way.
